Taco Salad Dressing
This dairy free taco salad dressing is creamy, full of flavor, and easy to make. Perfect for summer salads! Or use it as a snack time dip for raw veggies.

Ingredients
  • 1/4 small onion, roughly chopped(or 1/8 of a large onion)
  • 1/2 avocado
  • 1/2cup olive oil
  • 1/2tsp cumin
  • 3/4tsp unrefined sea salt
  • 2tbsp lime juice(about one lime)
  • 1/2cup loosely packed cilantro
  • 1/4cup filtered water, divided
Instructions
  1. Add all ingredients except for water to a blending cup or mason jar.
  2. Using an immersion (stick) blender, combine ingredients by blending on high for 2-3 minutes.
  3. With the blender running, add water one tablespoon at a time until dressing reaches your preferred consistency.
Recipe Notes

Makes about 1.5 cups of dressing.

If you prefer a more liquid (runnier) dressing, omit the onions.

I prefer to make this dressing just before serving. If refrigerated prior to serving, it will thicken and you may need to add more water.
